From November 2016 the city of Alicante is known worldwide as “Alicante, ciudad del arroz”. This new brand has been created to promote our cuisine and the city of Alicante. A recipe book with 17 typical rice dishes from Alicante has been published.

ARROZ CON PATA DE TERNERA Y GARBANZOS
RICE LEG OF BEEF WITH CHICKPEAS
This is a quite genuine and peculiar rice but I have to say it is one of my favourites. It is made with boned leg of beef, chickpeas and a sauté of tomato, onion, black pudding and chorizo. It is a creamy, jellied rice.
Without any doubt the best restaurant to try this dish is El Raco del Pla or La Taverna del Raco del Pla. They cook it excellently.
ARROZ DEL SENYORET
This rice is cooked with peeled prawns, tuna and monkfish. The name (young gentleman rice) is because you do not need to get your hands dirty when you eat it. In the past, the servants of the high class used to cook this rice to gratify the “senyoret”.
We recommend to taste this rice in Restaurante El Maestral (only 10 minute walk from El Palmeral de Madaria).
ARROZ CON ESPINACAS Y BOQUERONES
RICE WITH WHITE ANCHOVIES AND SPINACHS
This rice is cooked with a sauté of garlic, tomato and dried pepper in a fish stock. After adding the rice and cook it on a high heat, we will add the spinachs and the white anchovies filleted and de-headed on top.
